Fried Rice
Veggie Fried Rice

Ingredients
1 - 2 sweet potatoes, peeled and chopped into small cubes
2 tbsp sesame oil
2 tbsp water
1/2 yellow onion, diced
1 carrot, chopped into small pieces
1 head broccoli, chopped into small pieces
2 tbsp Chinese 5-spice powder
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp rice vinegar
4 cups leftover rice (whatever you’ve got in the fridge will work)
4 eggs, scrambled
1 cup sliced green onions
1 cup green peas
1 cup corn
Instructions
In a large pan or skillet, heat 1 tbsp of oil
Add the sweet potato and water and cook on medium heat until the potato starts browning, stirring often (about 5 mins)
Add the onion, carrot, and broccoli and cook until the onions are translucent (about 3 mins)
Add 5-spice powder and garlic and mix well
Remove your veggies from the pan and set them aside
In a glass or small bowl, combine soy sauce and rice vinegar
In your large pan or skillet, heat 1 tbsp of oil
Add in the rice and cook over medium heat until warm (about 3 mins)
Add the sauce and mix well
Add in your scrambled eggs
Add the veggies back in
Fold in the green onions, peas, and corn
