Green Fact
Researchers have found that plant-based diets have the potential to reduce food’s land use by 76%, food’s greenhouse gas emissions by 49%, acidification by 50%, eutrophication by 49%, and scarcity-weighted freshwater withdrawals by 19%. Additionally, the land no longer required for food production could remove approximately 8.1 billion metric tons of C02 from the atmosphere each year over 100 years as natural vegetation reestablishes and carbon re-accumulates.
