Tomato Zucchini Casserole

Tomato Zucchini Casserole

  • Makes 2-4 servings

Ingredients

  • 1 cup grated cheddar cheese

  • 1 cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 2 zucchinis

  • 4 medium tomatoes

  • 1/2 cup butter

  • 1/2 of an onion

  • 1 cup breadcrumbs

Instructions

  • Preheat oven to 375 degrees F.

  • Grease a medium baking dish and set aside

  • In a bowl, combine the cheese, oregano, and basil and set aside

  • Chop the zucchini into slices and place them in the baking dish (place as many slices as will fit in a single layer)

  • Sprinkle 1/4 of your cheese mixture on top of the zucchini slices

  • Chop the tomatoes into slices and add these as a second layer to the baking dish

  • Sprinkle another 1/4 of your cheese mixture on top

  • Continue layering the zucchini, tomatoes, and cheese mixture until you’re out of ingredients

  • In a medium pan, melt the butter over medium heat

  • Add the onion and cook until soft and translucent

  • Stir in the breadcrumbs and cook until they have absorbed the butter

  • Sprinkle the breadcrumb mixture on top of the casserole

  • Cover with foil and bake for 25 minutes

  • Remove the foil and bake for another 20 minutes
