Tomato Zucchini Casserole

Ingredients
1 cup grated cheddar cheese
1 cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
2 zucchinis
4 medium tomatoes
1/2 cup butter
1/2 of an onion
1 cup breadcrumbs
Instructions
Preheat oven to 375 degrees F.
Grease a medium baking dish and set aside
In a bowl, combine the cheese, oregano, and basil and set aside
Chop the zucchini into slices and place them in the baking dish (place as many slices as will fit in a single layer)
Sprinkle 1/4 of your cheese mixture on top of the zucchini slices
Chop the tomatoes into slices and add these as a second layer to the baking dish
Sprinkle another 1/4 of your cheese mixture on top
Continue layering the zucchini, tomatoes, and cheese mixture until you’re out of ingredients
In a medium pan, melt the butter over medium heat
Add the onion and cook until soft and translucent
Stir in the breadcrumbs and cook until they have absorbed the butter
Sprinkle the breadcrumb mixture on top of the casserole
Cover with foil and bake for 25 minutes
Remove the foil and bake for another 20 minutes
