Tomato Soup

Roasted Tomato Soup

  • Makes 4 servings

Ingredients

  • 4 tomatoes (any kind you like)

  • 2 cups cherry tomatoes

  • 1 chopped yellow onion

  • 1 garlic bulb

  • 1 cup fresh basil leaves

  • 2 tbsp olive oil

  • 1 cup table cream

Instructions

  • Preheat oven to 400 degrees F.

  • Place tomatoes, onion, garlic cloves, and 1/2 cup of the basil leaves on a lined baking sheet

  • Drizzle with olive oil

  • Bake for 20 mins

  • In a blender, combine the cream and the rest of the basil, along with the roasted tomatoes, onion, garlic, and basil

  • Reheat the soup on the stove if necessary

  • Season with pepper to taste
