Ingredients
For the tofu:
1/2 cup soy sauce
2 tbsp olive oil
2 cloves minced garlic
1 tsp grated ginger
1 block firm tofu
For the sweet potato:
2 sweet potatoes
1 tbsp olive oil
For the sushi rice:
2 cups sushi rice
3 cups water
1/2 cup rice vinegar
1/4 cup white sugar
Toppings:
2 cups chopped cucumbers (can be subbed out for any other vegetable)
2 avocados, peeled and sliced
Kewpie Mayo (optional)
Instructions
First, make the tofu and sweet potato…
Preheat oven to 400 degrees F.
In a shallow baking dish, combine soy sauce, olive oil, garlic, and ginger and set aside
Unpackage the tofu (be careful it will be watery) and slice it into squares or triangles of your desired size and thickness
In a large pan, place the tofu in a single layer and cook over medium heat for about one minute (you may have to do this in batches)
Flip the tofu and cook for another 30 seconds, using a spatula to press the tofu down into the pan (this will help remove excess water)
Place your cooked tofu into the baking dish and let it marinate for at least 20 minutes (flip the tofu after 10 minutes if the soy sauce mixture doesn’t cover it completely)
While the tofu is marinating, peel and chop your sweet potato into bite-sized pieces
In a bowl, toss the sweet potato with olive oil
Transfer the sweet potato to a lined baking sheet
Transfer the tofu to a lined baking sheet
Cook your tofu and sweet potato for 20 minutes
Next, make the sushi rice…
In a pot, combine sushi rice and water and bring to a boil over medium-high heat
Reduce heat to low and cook until all water has been absorbed
Mix in the rice vinegar and white sugar
Now add your rice, tofu, sweet potato, and toppings into a bowl and enjoy!
