Jackfruit Nachos

Jackfruit ‘Pulled Pork’ Nachos

  • Prep time: 20 minutes

  • Cook time: 25 minutes

  • Serves 4-6 (as an appetizer)

  • Contains dairy

Ingredients

  • For the jackfruit:

    • 2 cans of young green jackfruit

    • 1 tbsp of olive oil

    • 1 yellow onion (chopped)

    • 2 tbs of pulled pork or BBQ seasoning

    • 1 cup of BBQ sauce

    • 1/2 of cup water

  • For the nachos:

    • 1 large bag of tortilla chips

    • 1-2 cups of cheddar cheese (shredded)

    • 1-2 cups of black beans

    • 1/2 cup of green onion (chopped)

    • 1 cup of sour cream (optional topping)

Instructions

  • Make the jackfruit…

    • Drain and rinse the jackfruit thoroughly

    • Chop off any hard portions of the jackfruit and set the rest aside

    • Heat the olive oil in a large skillet over medium heat

    • Add the onion and cook for about 3 minutes until translucent

    • Add the jackfruit, seasoning, BBQ sauce, and water

    • Stir well to combine, then simmer on low-medium for about 10 minutes or until most of the liquid has dried up

    • Turn the heat up to medium for the last few minutes as you mash the jackfruit with a potato masher to create a shredded texture

  • Make the nachos…

    • Preheat oven to 350 degrees F.

    • On a large baking sheet, lay out half of the tortilla chips

    • Sprinkle half the cheese on top

    • Add half of the black beans and half of the BBQ jackfruit

    • Layer on the second half of tortilla chips, followed by the rest of the cheese, black beans, and jackfruit

    • Bake for 12 minutes

    • Top with green onion and sour cream!
