Granola

Homemade Granola

  • Prep time: 5 mins

  • Cook time: 25 minutes

  • Makes 6-8 cups of granola

  • Easy

  • Vegan

Ingredients

  • 4 cups quick oats

  • 1 cup raw nuts or seeds (your choice!)

  • 1 tbsp cinnamon

  • 1/2 cup melted coconut oil

  • 1/2 cup maple syrup

  • 1 tbsp vanilla extract

  • 1-2 cups optional mix-ins (dried fruit, chocolate chips, coconut flakes, etc.)

Instructions

  • Preheat oven to 350 degrees F.

  • Line two baking sheets with parchment paper

  • In a large bowl, mix together the oats, nuts/seeds, and cinnamon

  • Add the coconut oil, maple syrup, and vanilla extract, and stir until all oats are coated

  • Pour the granola onto the baking sheets (half on one sheet and half on the other) and spread it into an even layer

  • Bake for 25 minutes or until lightly golden, stirring halfway through

  • Let cool completely (about one hour) and then add in your mix-ins

  • Store at room temperature in an air-tight container
