Homemade Granola

Ingredients
4 cups quick oats
1 cup raw nuts or seeds (your choice!)
1 tbsp cinnamon
1/2 cup melted coconut oil
1/2 cup maple syrup
1 tbsp vanilla extract
1-2 cups optional mix-ins (dried fruit, chocolate chips, coconut flakes, etc.)
Instructions
Preheat oven to 350 degrees F.
Line two baking sheets with parchment paper
In a large bowl, mix together the oats, nuts/seeds, and cinnamon
Add the coconut oil, maple syrup, and vanilla extract, and stir until all oats are coated
Pour the granola onto the baking sheets (half on one sheet and half on the other) and spread it into an even layer
Bake for 25 minutes or until lightly golden, stirring halfway through
Let cool completely (about one hour) and then add in your mix-ins
Store at room temperature in an air-tight container
