Butter Tofu

Butter Tofu

Like butter chicken, but without the chicken

  • Prep time: 30 mins

  • Cook time: 15 mins

  • Contains dairy

  • Makes 2-4 servings

Ingredients

  • Marinade

    • 1/2 cup plain yogurt

    • 1 tsp turmeric

    • 1 tbsp garam masala

    • 1/2 tsp chilli powder

    • 1 tsp cumin

    • 1 tsp coriander

    • 1/2 tbsp lemon juice

    • 1 tbsp ginger (freshly grated)

    • 2 garlic cloves (minced)

    • 1 block extra-firm tofu

  • Curry

    • 2 tbsp butter

    • 1 cup tomato puree

    • 1 cup heavy cream

    • 1 tbsp sugar

Instructions

  • Marinate the tofu

    • Preheat oven to 350 degrees F.

    • Using your hands, break the tofu into bite-sized pieces

    • Spread the tofu pieces out on a lined baking sheet and bake for 10 minutes

    • In a bowl or covered container, combine all other marinade ingredients

    • Toss the baked tofu into the marinade and let it sit for at least 20 minutes (or cover and refrigerate overnight)

  • Make the curry

    • In a large pan, melt the butter over medium heat

    • Add the marinated tofu to the pan and cook for 5 minutes, tossing/flipping frequently

    • Add the remaining curry ingredients plus any extra marinade, reduce the heat, and simmer for 10 minutes

  • Serve with rice and/or naan
