Butter Tofu
Like butter chicken, but without the chicken

Makes 2-4 servings
Ingredients
Marinade
1/2 cup plain yogurt
1 tsp turmeric
1 tbsp garam masala
1/2 tsp chilli powder
1 tsp cumin
1 tsp coriander
1/2 tbsp lemon juice
1 tbsp ginger (freshly grated)
2 garlic cloves (minced)
1 block extra-firm tofu
Curry
2 tbsp butter
1 cup tomato puree
1 cup heavy cream
1 tbsp sugar
Instructions
Marinate the tofu
Preheat oven to 350 degrees F.
Using your hands, break the tofu into bite-sized pieces
Spread the tofu pieces out on a lined baking sheet and bake for 10 minutes
In a bowl or covered container, combine all other marinade ingredients
Toss the baked tofu into the marinade and let it sit for at least 20 minutes (or cover and refrigerate overnight)
Make the curry
In a large pan, melt the butter over medium heat
Add the marinated tofu to the pan and cook for 5 minutes, tossing/flipping frequently
Add the remaining curry ingredients plus any extra marinade, reduce the heat, and simmer for 10 minutes
Serve with rice and/or naan
