No-Bake Cherry Cheesecake

Inspired by my mom’s recipe

  • Prep time: 15 mins

  • Set time: 2 hours

  • Contains dairy

Ingredients

  • 2 cups crushed graham crackers

  • 1/2 cup melted butter, unsalted

  • 1/2 brick Philadelphia cream cheese

  • 1 cup whipping cream (or one small carton)

  • 2 tbsp sugar

  • 1 tbsp vanilla extract

  • 1 can of cherry pie filling

Instructions

  • Mix together the crushed graham crackers and melted butter

  • Press this into the base of a baking dish (or pie dish)

  • Using a standing mixer, beat the whipping cream on medium-high until stiff peaks form (2-3 mins)

  • Add the cream cheese, sugar, and vanilla extract and mix until smooth

  • Pour this mixture onto the pie crust

  • Set in the fridge (or outside if it’s cold enough) for two or more hours

  • Pour the cherries on top and enjoy!
