Veggie Nachos

Ingredients

  • 1 large bag of tortilla chips

  • 2 cups grated cheese (any kind you like)

  • 1-2 cups black beans

  • 1-2 cups corn

  • 1-2 cups chopped tomatoes

  • 1-2 cups chopped green onions

  • 1 cup chopped chives

  • 500 ml sour cream (or 1 large tub)

Instructions

  • Preheat oven to 350 degrees F.

  • On a large, lined baking sheet, spread out tortilla chips

  • Sprinkle 1 cup of the cheese over the tortilla chips

  • Add your desired amount of beans, corn, and tomatoes

  • Sprinkle on the remaining cup of cheese

  • Bake the nachos for 7-10 mins

  • Top your cooked nachos with green onions

  • In a bowl, combine the sour cream and chives - drizzle this mixture on the nachos or leave it on the side for dipping

  • Enjoy!
