Basic Pesto

  • Prep time: 15 mins

  • Easy

  • Contains dairy (vegan version below)

Ingredients

  • 2 cups basil leaves

  • 1/2 cup parmesan cheese

  • 2 handfuls pinenuts (or walnuts)

  • 3 garlic cloves (minced)

  • 1/2 cup of extra virgin olive oil

  • Up to 1/2 cup of water

Instructions

  • Add all ingredients except the water into a blender and blend

  • Add as much of the water as necessary until the pesto is blended

Plant-Based Pesto

  • Prep time: 15 mins

  • Difficulty level: Easy

  • Vegan

Ingredients

  • 2 cups of basil leaves

  • 2 tbsp of nutritional yeast

  • 2 handfuls of chopped walnuts

  • 3 minced garlic cloves

  • 1/2 cup of extra virgin olive oil

Instructions

  • Add all ingredients into a blender and blend!

  • If it’s not mixing well, add a splash of cold water

Green Fact

Authentic parmesan is never vegetarian because it is made using animal rennet (enzymes produced in the stomachs of ruminant mammals). To ensure your parmesan is vegetarian, check the ingredient label for “vegetable enzyme or rennet” or “microbial enzyme.”
