Lasagna Soup

  • Prep time: 15 mins

  • Cook time: 25 mins

  • Makes 4 servings

Ingredients

  • 1-2 tbsp olive oil

  • 1 yellow onion, diced

  • 2 cloves of garlic, minced

  • 2 cups mushrooms, chopped

  • 1-2 handfuls of spinach

  • 4 cups vegetable broth (or one tall box)

  • 4 tbsp tomato sauce

  • 4-6 lasagna noodles broken up into pieces

  • Ricotta (optional topping)

Instructions

  • Warm a large pan or pot over medium heat

  • Add one tbsp of the olive oil to the pan/pot, then throw in the onions and garlic

  • Cook on medium-low heat until the onions are translucent

  • Add your mushrooms and the second tbsp of olive oil

  • Cook on medium-low heat for about two minutes

  • Add your spinach and cook until the spinach has shrivelled up

  • Add the vegetable broth, tomato sauce, and lasagna noodles

  • Cook for 10 minutes over medium heat

  • Serve with a dollop of ricotta cheese and a side of sourdough bread!
