Lasagna Soup

Makes 4-6 servings
Ingredients
1-2 tbsp olive oil
1 yellow onion, diced
2 cloves of garlic, minced
2 cups mushrooms, chopped
1-2 handfuls of spinach
4 cups of vegetable broth (or one tall box)
4 tbsp of tomato sauce
4-6 lasagna noodles broken up into pieces
Ricotta (optional topping)
Instructions
Warm a large pan or pot over medium heat
Add one tbsp of the olive oil to the pan, then throw in the onions and garlic
Cook on medium-low heat until the onions are translucent
Add your mushrooms and the second tbsp of olive oil
Cook on medium-low heat for about two minutes
Add your spinach and cook until the spinach has shrivelled up
Add the vegetable broth, tomato sauce, and lasagna noodles
Cook for 10 minutes over medium heat
Serve with a dollop of ricotta cheese and a side of sourdough bread!
