Blueberry Apricot Cobbler

Mixed fruit cobbler

Ingredients

  • 2 cups blueberries

  • 2 cups chopped apricots

  • 1 & 1/2 cup sugar

  • 1/4th juice of a lemon

  • 1/2 cup melted butter

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • Pinch of salt

  • 3/4 cup 2% milk

Instructions

  • Preheat oven to 350 degrees F.

  • In a bowl, combine fruit, 1/2 cup sugar, lemon juice, and melted butter

  • Pour the fruit mixture into a medium-sized baking dish

  • In a bowl, mix together the flour, baking powder, salt, and milk

  • Add your batter to the baking dish (pour over the fruit mixture)

  • Bake for 35 mins or until the batter has lightly browned on top

  • Enjoy with a scoop (or two) of vanilla ice cream!
