Vegan Oatmeal Muffins

Oatmeal muffins

Ingredients

  • 2 ripe bananas

  • 2 tbsp maple syrup

  • 1/2 cup plant-based milk

  • 2 tbsp peanut butter

  • 1 tbsp vanilla extract

  • 2/3 cup quick oats

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1 tbsp cinnamon

  • 1 cup mix-ins (max)

Instructions

  • Preheat oven to 350 degrees F.

  • In a large bowl, mash the bananas and combine with the maple syrup, milk, peanut butter, and vanilla extract

  • Stir in the oats, baking powder, baking soda, salt, and cinnamon

  • Add your desired mix-ins

  • Divide the batter evenly among six greased muffin cups

  • Bake for 23 mins or until lightly browned around the edges
