Vegan Pumpkin Pasta

Easy Four Ingredient Pasta

  • Makes 2-4 servings

Ingredients

  • 2 cups your choice pasta

  • 1 can coconut milk

  • 1 cup pumpkin puree

  • 1 tbsp red curry paste

Instructions

  • In a large pot, cook the pasta according to package directions

  • In a second large pot, whisk together the coconut milk, pumpkin, and curry paste over low heat until warm (this won’t take long)

  • Add the cooked pasta to the pumpkin sauce

  • Enjoy!
