Vegan Pumpkin Pasta

Easy Four Ingredient Pasta

Ingredients

  • 2 cups your choice pasta

  • 1 can coconut milk

  • 1 cup pumpkin puree

  • 1 tbsp red curry paste

Instructions

  • In a large pot, cook the pasta according to package directions

  • In a second large pot, whisk together the coconut milk, pumpkin, and curry paste over low heat until warm (this won’t take long)

  • Add the cooked pasta to the pumpkin sauce

  • Enjoy!

To meet the central goal of the Paris Agreement (to limit global warming to 2°C or less), the world’s agricultural emissions must be reduced considerably. Even if all other fossil fuel impacts are eliminated, emissions from the global food system alone make it impossible to limit warming to 1.5°C and challenging to realize the two °C target.
