Blueberry-Apricot Cobbler

Ingredients
2 cups blueberries
2 cups chopped apricots
1 & 1/2 cup sugar
1/4th juice of a lemon
1/2 cup melted butter
1 cup all-purpose flour
2 tsp baking powder
Pinch of salt
3/4 cup oat milk
Instructions
Preheat oven to 350 degrees F.
In a bowl, combine fruit, 1/2 cup sugar, lemon juice, and melted butter
Pour the fruit mixture into a medium-sized baking dish
In a bowl, mix together the flour, baking powder, salt, and milk
Add your batter to the baking dish (pour over the fruit mixture)
Bake for 35 mins or until the batter has lightly browned on top
Enjoy with a scoop (or two) of vanilla ice cream!
