Vegan Coleslaw

Great on a sandwich or as a side

Ingredients

  • 1 head green cabbage

  • 1 medium carrot

  • 1 cup vegan mayonnaise (Hellmann’s makes a good one)

  • 2 tbsp white vinegar

  • 1 tbsp apple cider vinegar

  • 4 tsp white sugar

  • 1 tsp celery seed

  • 1/2 tsp black pepper

Instructions

  • Thinly slice green cabbage

  • Shred carrot

  • In a medium bowl, combine the mayonnaise, white vinegar, apple cider vinegar, sugar, celery seed, and black pepper

  • Add the green cabbage and carrot

  • Mix it all together, and you’re done!
